Feta Sandwich with Roasted Peppers and Basil

Ingredients

  • 2 small baguettes for 4 sandwiches or 8 slices of crusty bread like sourdough
  • 7 oz 200 grams Greek feta
  • 1 large garlic clove or more to taste
  • 1/3 cup plain yogurt
  • 2 tbsp finely chopped fresh basil
  • handful of arugula rocket
  • 1 tbsp unsalted butter or olive oil optional, for toasting the sandwich in the pan
  • 2 large roasted peppers or 2 fresh bell peppers to roast at home - if roasting bell peppers, you’ll also need a pinch of salt and black pepper and take a look at the notes for instructions

Instructions

  • Mix the feta and yogurt with a fork.
  • Add the finely chopped basil and minced garlic, and give everything a mix.
  • Slice the baguettes in half and then lengthwise.
  • Assemble the feta sandwich by adding the following: feta mix on both side, roasted peppers, and arugula (rocket)
  • (Optional): To a pan over medium heat, add 1 tbsp butter or olive oil and toast the baguette sandwiches on both sides for a couple of minutes. The sandwich is much more delicious if toasted with butter (or olive oil), but it’s also very nice if served without being toasted.

Notes

Roasted Peppers – You can roast peppers at home in the oven using my recipe for roasted peppers (three ways) or in the pan for about 10 minutes on medium-high heat with a touch of olive oil and a pinch of salt and pepper (turning occasionally).
