Mix the feta and yogurt with a fork.
Add the finely chopped basil and minced garlic, and give everything a mix.
Slice the baguettes in half and then lengthwise.
Assemble the feta sandwich by adding the following: feta mix on both side, roasted peppers, and arugula (rocket)
(Optional): To a pan over medium heat, add 1 tbsp butter or olive oil and toast the baguette sandwiches on both sides for a couple of minutes. The sandwich is much more delicious if toasted with butter (or olive oil), but it’s also very nice if served without being toasted.
