Finely chop the pistachios and cranberries and shape them into a rectangle (the width of the goat cheese log). You can use a chef’s knife or a food processor to chop them. I prefer chopping them with the knife (as there are fewer dishes to clean at the end:))
Drizzle the honey on top of the chopped pistachios and cranberries.
Roll the goat cheese log in them. You can use your hands or a scraper (like the one pictured in the photos) to get all the pistachios and cranberries off the board and onto the cheese log.
