Steak Panini

Ingredients

  • 2 panini bread rolls or 4 slices of your favorite bread
  • 1 sirloin steak 200 grams or 7 oz
  • 75 grams blue cheese 2.6 oz or ~1/3 cup
  • 1 large roasted red bell pepper
  • a handful of arugula
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  • Sprinkle the salt and pepper on the steak, and cook the steak to preference. I cooked this sirloin steak on high heat for about 1 minute on each side, and then on medium heat for another 1 minute per side.
  • Assemble the paninis. On each slice, place 1/4 of the blue cheese (crumbled or sliced). Add the roasted red pepper, steak, and arugula.
  • Bring the slices together and, if you have a panini press, simply place your paninis in and push down. Generally, about 3-4 minutes should be enough.
    If you don’t have a panini press, don’t worry! It’s very easy to make the paninis in a pan on the stove over medium-high heat. Simply place the paninis in the pan, and press them with a heavy item of cookware, such as a large cooking pot, or with a chef’s press (if lucky enough to own one). Cook for about 5 minutes, flipping the paninis midway through the cooking time.

Notes

Note that for the roasted pepper, you can use jarred roasted red pepper. If you want to take it to the next level, roast the bell peppers at home in the oven or on the grill. I usually roast a batch of peppers and then keep them in the fridge for later use.
To roast some delicious red pepper, simply cut the bell peppers in half and clean the inside, place them in a roasting tray, drizzle some light olive oil, and roast them in the oven at 220°C (430°F) for about 30 minutes until lightly charred.
