In a large bowl, mix the tahini paste, fresh lemon juice, one clove of minced garlic, and salt with a whisk.
Slowly add the water (one tablespoon at a time) while whisking until you have a smooth consistency. I used 1/2 cup of water (8 tablespoons), but you may need less or more, depending on the tahini paste you use.
Taste and adjust for salt, lemon juice, or extra garlic as you prefer.
