Ingredients You’ll Need for this Recipe

This is a super simple avocado toast recipe. Before you start cooking, you’ll first need the following ingredients:

  • Avocado – 2 avocados
  • Toast – 4 thick slices of your favorite bread (multigrain, sourdough, etc)
  • Feta – 3.5oz crumbly feta (about 100 grams or about 3/4 cups of crumbled feta)
  • Yogurt – 1/2 cup Greek yogurt
  • Garlic – 2 garlic cloves
  • Tomatoes – 16-20 cherry tomatoes
  • Salt – a pinch of kosher salt or flaky sea salt
  • Pepper – a pinch of freshly ground black pepper
  • Basil – a handful of fresh basil (about 10-15 leaves)
  • Oil – 3 tbsp olive oil

How to Make it in 5 Simple Steps

Step 1 – Mix the crumbled feta, yogurt, and minced garlic in a small bowl.

Step 2 – To the cherry tomatoes, add a pinch of salt, a pinch of black pepper, 1 tbsp of olive oil and toss them to coat them in the oil. Char them in a small frying pan/skillet over medium-high heat for about 8-10 minutes until a bit charred on the outside and soft on the inside (with some of the juices coming out). Alternatively, you could roast them in the oven at 390°F (200°C) for about 10 minutes.

Step 3 – While the cherry tomatoes are roasting, brush the bread slices with olive oil on both sides. Then, grill them in a grill pan, skillet/frying pan, or cast iron pan for a couple of minutes on each side over medium-high heat until nicely toasted.

Step 4 – Get the assembly board together: grilled/toasted bread, charred/roasted cherry tomatoes, avocados (cut in half and then cut into slices), feta-yogurt mixture, and fresh basil.

Step 5 – Spread the avocado on the toasted/grilled bread. Then, add the feta-yogurt mixture. Add 4-5 roasted tomatoes on each slice and finally some fresh torn basil. Season with more salt and black pepper (to taste, if needed).

There you go, it’s that simple! I like to serve the toast in pairs, with a glass of juice in the morning and maybe some additional greens, like arugula.
