Avocado Toast with Smoked Salmon
This avocado toast with smoked salmon should go down a treat at your next brunch! It tops grilled/toasted bread with mashed avocado, smoked salmon, and a lemon herb crème fraîche with capers. Every bite has crunch and creaminess, sweetness and tang, and so much more.
Ingredients to Get Together
To make this smoked salmon avocado toast, you’ll need the following:
- Avocado – 2 ripe Haas avocados
- Bread – 4 thick slices of bread (about 3/4-inch thickness) (sourdough, multigrain, and olive bread are all good choices)
- Smoked Salmon – 4 oz smoked salmon (113 grams)
- Crème Fraîche – 1/3 cup crème fraîche
- Lemon – 1 tbsp fresh lemon juice and the zest from one lemon
- Dill – 1 tbsp chopped fresh dill
- Spring Onions – 2 spring onions/scallions
- Capers – 2 tbsp capers
- Olive Oil – 2 tbsp extra-virgin olive oil (to brush the bread for grilling)
- Salt – a pinch of kosher salt or sea salt flakes
- Black Pepper – a pinch of freshly ground black pepper
Directions with Photos
Step 1 – Brush the bread slices with olive oil on both sides. Then, grill them in a skillet, grill pan, or cast iron pan for a couple of minutes on each side over medium-high heat until nicely toasted.
Step 2 – Mix the crème fraîche with lemon juice, lemon zest, chopped dill, chopped spring onions, and chopped capers, as well as a pinch of salt and pepper.
Step 3 – Get the assembly board ready: skillet-toasted bread, smoked salmon, lemon-herb crème fraîche and avocados.
Step 4 – Add the mashed avocado to the toasted bread slices. Then, add the smoked salmon and, top it all off with the lemon-capers-herb crème fraîche.
One slice alone is loaded with goodness, but I still like to serve them in pairs. Toast always comes in pairs, right?
This is a brunch choice that oozes elegance. The herby, creamy spread and the smoked salmon work so well together, with a little sharpness of lemon zest running through.
