Mediterranean Couscous Bowl with Chicken

You can have this easy Mediterranean couscous bowl ready in minutes if you make the tzatziki and marinade the chicken ahead of time. It is packed with a delightful blend of different textures and flavors, and it makes for a filling lunch or dinner.

This recipe combines 5-minute couscous with Greek and other Mediterranean flavors like tzatziki, Kalamata olives, feta, roasted peppers, and more. The chicken itself is marinated in yogurt, lemon, and oregano.

Ingredients

To make this Mediterranean couscous bowl, you’ll need the following per bowl.

  • Couscous (instant/5-minute couscous) – 3/4 cup of cooked couscous (or 1 cup for a large portion), see instructions below. Note: For reference, generally, 1 cup of dried couscous will give you about 2.5 cups of cooked couscous.
  • Cooked chicken (recipe included) – 1 cooked marinated chicken breast
  • Tzatziki – 1/3 cup of homemade tzatziki sauce
  • Olives – 8 Kalamata olives, pitted
  • Feta – 1 oz feta, crumbled
  • Tomatoes – 7 baby tomatoes, halved
  • Roasted pepper – 1 roasted pepper, cut or torn into thin strips. If using jarred peppers, use just half a pepper, as the roasted pepper jars generally have some vinegar, and the flavor of the roasted pepper can be overpowering due to the vinegar.
  • Lemon – 1 lemon wedge, optional.

Instructions With Photos

Step 1. Marinate and cook the chicken breast based on this recipe.

Step 2. While waiting on the chicken to marinate, you can make the tzatziki.

Step 3. Prepare the instant/5-minute couscous according to the package instructions or use this recipe for added flavor (lemon, butter, and flaky sea salt). Taste the couscous, and if it’s too hard, add 1-2 tablespoons of water and microwave it for 30-45 seconds.

Step 4. Assemble. Place 3/4 cup of couscous (or 1 cup if you want a large portion) at the bottom of the bowl. Add the roasted pepper strips, halved baby tomatoes, pitted Kalamata olives, chicken (cut into bite-sized pieces), crumbled feta, tzatziki, and garnish with a lemon wedge.

Note 1: For reference, generally, 1 cup of dried couscous will give you about 2.5 cups of cooked couscous.
Note 2: If using jarred peppers, use just half a pepper instead of one, as the roasted pepper jars generally have some vinegar, and the flavor of the roasted pepper can be overpowering due to the vinegar.
Note 3: Recipe timings. The tzatziki recipe takes 15 minutes to make. The instant/5-minute couscous takes 5 minutes to make. And the chicken takes just 10 minutes to cook (plus 30 minutes marinating). Ideally, make the tzatziki and marinade the chicken ahead of time. If making everything at the same time, use this order: 1) put the chicken in the yogurt marinade and set it aside 2) make the tzatziki 3) prep all the other ingredients, like halving the baby tomatoes and crumbling the feta, 4) make the couscous and cook the chicken at the same time.
