Sausage, Egg, and Cheese Wrap
Ideal for breakfast, a weekend brunch, or even a quick weeknight dinner, this sausage, egg, and cheese wrap is so quick and easy to make. The wrap has a filling of sweet Italian sausage, sweet roasted pepper, grated cheddar, and scrambled eggs.
Once rolled, you simply toast the wrap in a skillet until golden brown on either side. You can have it ready in 15 minutes.

Ingredients

Here’s what you need per wrap:
- Sweet Italian Sausage – 1 Sweet Italian Sausage, casing removed, about 3.5 oz or 100 g
- Eggs – 2 eggs
- Cheese – 3 tbsp grated sharp/mature cheddar (white or yellow/orange cheddar both work)
- Tortilla Wrap – 1 plain tortilla wrap
- Roasted Pepper – 1/2 roasted red pepper, diced, homemade or jarred both work
- Salt – a pinch of salt, for the eggs
- Butter – 1 tbsp butter, divided in half (half for the eggs and half for toasting the wrap in the skillet).
How to Make the Wrap
Step 1. Cook the sausage. Heat a skillet (frying pan) over medium-high heat. Add the sausage and break it into small crumbles as it cooks. Cook until browned with no pink remaining, about 5–6 minutes. Add the diced roasted pepper and cook until warmed through, about 30 seconds. Transfer the sausage and pepper to a plate.

Step 2. Make the scrambled eggs. Whisk the eggs with a pinch of salt until smooth. Add half the butter to the skillet (frying pan) over medium heat. Once the butter has melted, add the whisked eggs and stir gently until softly set but still slightly glossy, about 1–2 minutes. Remove the eggs and wipe the skillet clean.

Step 3. Assemble the wrap. Warm up the tortilla for 10 seconds in the microwave so it doesn’t tear. Sprinkle the cheese all over the tortilla, then add the cooked sausage, pepper, and eggs in the middle. Fold in the sides and roll up tightly.

Step 4. Toast in the skillet. Return the skillet to medium heat. Add the remaining butter. Once the butter has melted, place the wrap seam-side down and toast until golden, about 1–2 minutes. Turn and toast the remaining sides until golden all over and the cheese is melted.

Step 5. Serve.

Variations
There are many different variations of this wrap you could try. One of my favorites is the avocado and tomato variation below. Scoop out half an avocado, mash it roughly, leaving it chunky, add 4 halved or chopped sweet baby tomatoes (plum or cherry) and a pinch of salt. Mix it all up and add it on top of the sausage-egg layers. You can still use the roasted pepper or skip it.

If you like it spicy, you can also add sriracha or hot sauce.
If you make it and love it, tell me all about it in a review below. I’d also love to know which variation you made, or which was your favorite.
