Smoked Salmon Salad with Avocado, Walnuts, and Goat Cheese
This rich, tart, and zesty smoked salmon salad sounds fancy but it’s so easy to make. It consists of smoked salmon on a bed of arugula tossed with a dressing of lemon, Dijon mustard, garlic, and olive oil, with toasted walnuts, chopped avocado, and goat cheese on top.
A serving of this salad with bread is great for lunch or dinner and ready in just 10 minutes. You can also serve it as an appetizer for a dinner party or as part of a spread alongside dips and charcuterie boards.
Salad Ingredients
If you want to make this salad, you’ll first need the following (for two servings):
- Smoked Salmon – 3.5 oz smoked salmon (100 grams)
- Arugula – 2 oz arugula/rocket (60 grams), washed and dried
- Avocado – 1 avocado
- Goat Cheese – 3 oz soft goat cheese (85 grams)
- Walnuts – 1/2 cup walnut pieces, preferably toasted
- Lemon – 1 lemon (2 tbsp of lemon juice and zest from the lemon)
- Extra-Virgin Olive Oil – 3 tbsp of extra-virgin olive oil
- Dijon Mustard – 1 tsp Dijon mustard
- Garlic – 1 small garlic clove
- Salt – 1/2 tsp flaky sea salt or kosher salt
- Pepper – 1/4 tsp ground black pepper
How to Make it with Photos
Step 1. Make the salad dressing by whisking together the lemon juice, the lemon zest, the extra-virgin olive oil, the Dijon mustard, the minced garlic, the salt, and the black pepper.
Step 2. Toss the arugula with half the salad dressing and distribute it in two salad bowls or put it on a serving platter to share.
Step 3. On top of the arugula, add toasted walnut pieces, soft goat cheese chunks, and chopped avocado.
Step 4. Add the smoked salmon on top and drizzle the remaining salad dressing over the top.
How to Serve it
Keep things simple, and serve it with fresh bread slices (like the sourdough baguette pictured below).
