Smoked Salmon Salad with Avocado, Walnuts, and Goat Cheese

Ingredients

  • 3.5 oz smoked salmon 100 grams
  • 2 oz arugula 60 grams, washed and dried
  • 1 avocado
  • 3 oz soft goat cheese 85 grams
  • 1/2 cup walnut pieces preferably toasted
  • 1 lemon 2 tbsp of lemon juice and zest from the lemon
  • 3 tbsp of extra-virgin olive oil
  • 1 tsp Dijon mustard
  • 1 small garlic clove
  • 1/2 tsp flaky sea salt or kosher salt
  • 1/4 tsp ground black pepper

Instructions

  • Make the salad dressing by whisking together the lemon juice, the lemon zest, the extra-virgin olive oil, the Dijon mustard, the minced garlic, the salt, and the black pepper.
  • Toss the arugula with half the salad dressing and distribute it in two salad bowls (or put it on a serving platter to share).
  • On top of the arugula, add toasted walnut pieces, soft goat cheese chunks, and chopped avocado.
  • Add the smoked salmon on top and drizzle the remaining salad dressing over the top.
