Vanilla Banana Chia Pudding Recipe

You know it’s time to party when the vanilla paste comes out! There’s just something so magical about using it in recipes. It has this delightful floral aroma and just seems to add the perfect amount of sweetness, and almost caramel-like qualities, to any dish it’s used in.

I’ve used banana, vanilla, and coconut milk in this recipe, all ingredients known for their mild sweetness and pleasant aromas. This makes for a truly luxurious tasting chia pudding, that hits all the right notes without being overly sweet or tart in any way.

You can absolutely eat this at any time of the day, but those flavor combinations make it perfect for a dessert chia pudding you can enjoy at home or serve to dinner guests to add a touch of class to proceedings.

Ingredients

To make my banana vanilla chia pudding, you’ll need the following ingredients:

  • Carton Coconut Milk (Coconut Drink)* – 2 cups
  • Chia Seeds – 8 tbsp
  • Bananas – 2 (one to go in the chia pudding and one for topping)
  • Vanilla Paste – 1 tbsp
  • Sweetener – 1 tbsp

* In the US, use the coconut milk sold in cartons. In the UK or EU, you’ll find the carton of coconut milk under the name ‘coconut drink.’ Just don’t use the canned coconut milk.

Step-by-Step Instructions

Step 1 – In a small blender, combine the coconut milk, vanilla paste, sweetener, and one banana, and blend until fully combined.

Step 2 – Divide the liquid equally between two smoothie jars or glasses.

Step 3 – Add 4 tbsp of chia seeds to each container.

Step 4 – Mix in the chia seeds into the liquid, and let it rest on the counter for about 15-20 minutes before stirring it one more time.

Step 5 – Cover with cling film/saran wrap and refrigerate overnight or for at least 8 hours.

Step 6 – Top with fresh banana slices and dig in with your spoon straight away! You can also top it with desiccated coconut or shredded coconut for additional flavor.

This is my naughty, shameless chia pudding I enjoy on weeknights or weekends! The creamy, sweet banana laced with the velvety caramel-like notes of the vanilla and the delicate sweetness of the coconut is simply heaven to the tastebuds.
