Ingredients

  • 5 bell peppers
  • 1/2 tsp kosher salt or more to taste
  • 1/4 tsp black pepper or more to taste
  • 2 tbsp of extra-virgin olive oil
  • 1 tbsp lemon juice
  • 1 tbsp finely chopped fresh parsley optional, for garnishing

Instructions

  • Slice the peppers (about 1/2-inch wide).
  • Season the peppers with salt and pepper and toss them with 1 tbsp of olive oil.
  • Preheat the air fryer according to the manufacturer’s instructions (or for about 3 minutes if unsure).
  • Air fry at 390°F (200°C) for about 18 minutes until cooked to your preference. Toss the peppers occasionally while cooking to ensure they all get a bit of char from the top.
  • Combine 1 tbsp of olive oil and 1 tbsp of lemon juice plus a pinch of salt and pepper. Pour over the peppers once they’re out of the air fryer and toss them in this lemon olive oil dressing.
  • Serve them with some finely chopped fresh parsley on top (optional).
