Slice the peppers (about 1/2-inch wide).
Season the peppers with salt and pepper and toss them with 1 tbsp of olive oil.
Preheat the air fryer according to the manufacturer’s instructions (or for about 3 minutes if unsure).
Air fry at 390°F (200°C) for about 18 minutes until cooked to your preference. Toss the peppers occasionally while cooking to ensure they all get a bit of char from the top.
Combine 1 tbsp of olive oil and 1 tbsp of lemon juice plus a pinch of salt and pepper. Pour over the peppers once they’re out of the air fryer and toss them in this lemon olive oil dressing.
Serve them with some finely chopped fresh parsley on top (optional).
