Air Fryer Peppers (Sweet and Charred Pepper Slices with Lemon)

These air fryer roasted peppers can be enjoyed as a side with so many dishes. Ready in under 30 minutes, use them to top fresh salads, juicy burgers, in veggie medleys, and so much more.

Ingredients You’ll Need

For this recipe, you’ll only need the following:

  • Bell Peppers – 5 bell peppers
  • Salt – 1/2 tsp kosher salt (or more to taste)
  • Pepper – 1/4 tsp black pepper (or more to taste)
  • Olive Oil – 2 tbsp of extra-virgin olive oil
  • Lemon Juice – 1 tbsp lemon juice
  • Fresh Parsley (optional) – about 1 tbsp finely chopped fresh parsley

Step-by-Step Instructions

Step 1 – Slice the peppers (about 1/2-inch thick).

Step 2 – Season the peppers with salt and pepper and toss them with 1 tbsp of olive oil.

Step 3 – Preheat the air fryer according to the manufacturer’s instructions (or for about 3 minutes if unsure).

Step 4 – Air fry at 390°F (200°C) for about 18 minutes, until cooked to your preference. Toss the peppers occasionally while cooking to ensure they all get a bit of char from the top.

Step 4 – Combine 1 tbsp of olive oil and 1 tbsp of lemon juice plus a pinch of salt and pepper. Pour over the peppers once they’re out of the air fryer and toss them in this lemon olive oil dressing.

What to Serve Them With

Step 5 – Serve them with some finely chopped fresh parsley on top (optional).

I find roasted peppers go so well with salmon. I’ve enjoyed both my blackened salmon and honey soy salmon recipes with peppers, broccoli, and rice.

Roasted peppers are also great with burgers. You can either put them in the burger or serve them on the side with French or sweet potato fries.

For a really simple dinner idea, serve them on top of couscous and drizzle some tahini sauce over the top. This is so good!
