In a small blender or food processor, blend the almond milk (or milk of choice), blueberries (save a few to decorate the top), sweetener, and orange zest. You’ll get a beautiful magenta-like hue to the liquid.
Divide the liquid up between two small jars or other small glass containers you have on hand and add 4 tbsp of chia seeds to each.
Mix the chia seeds into the liquid. Wait 15 minutes and stir again, then place them in the refrigerator overnight (or about 6-8 hours).
I like to add a handful of blueberries to each pudding not only as a garnish but as a cheeky way to get a couple more of these yummy berries into the recipe. You can also add some more honey or agave syrup on top if the chia pudding is not sweet enough for you.
