Blueberry Chia Pudding Recipe
There’s so much written about blueberries and the benefits of this antioxidant superfood, so I simply had to make a chia pudding putting this humble berry as the star ingredient.
My blueberry chia pudding has a very nuanced flavor profile. Blueberries are sweet, but not overpowering, while the orange zest adds some welcome notes of citrus, without being too acidic.
If you want a fun and fast way to get more blueberries into your life, this is such a good way to do it. Prepare them overnight, and grab one of these energy-fueled puddings in the morning before you go to work – perfect!
Ingredients
To make my blueberry chia pudding, you’ll need the following ingredients:
- Chia Seeds – 8 tbsp
- Almond Milk (Almond Drink) – 2 cups
- Blueberries – 1 cup
- Sweetener (Agave or Honey) – 2 tbsp
- Orange Zest – 1 tbsp
Step-by-Step Instructions
Step 1 – In a small blender or food processor, blend the almond milk (or milk of choice), blueberries (save a few to decorate the top), sweetener, and orange zest.
You’ll get a beautiful magenta-like hue to the liquid.
Step 2 – Divide the liquid up between two small jars or other small glass containers you have on hand and add 4 tbsp of chia seeds to each.
Step 3 – Mix the chia seeds into the liquid. Wait 15 minutes and stir again, then place them in the refrigerator overnight (or about 6-8 hours).
Step 4 – I like to add a handful of blueberries to each pudding not only as a garnish, but as a cheeky way to get a couple more of these yummy berries into the recipe. You can also add some more honey or agave syrup on top if the chia pudding is not sweet enough for you.
This is one of the more simple chia pudding recipes I’ve done, and it’s so creamy and delicate. The chia seeds add a little crunch, and those blueberries burst with energy and mild sweetness when you bite in.
