Chocolate Chia Pudding Recipe That’s Rich and Indulgent

Sometimes it’s good to treat yourself, and my chocolate chia pudding recipe is exactly for those times you want to pull something sweet and yummy from the fridge and tuck in!

Thick, creamy, sweet, and earthy, my chocolate chia pudding is super simple to put together and makes for a great dessert to have at home.

I’ve used cocoa and dark chocolate in this recipe to reign in the super sweetness, and instead, have a more balanced flavor profile that’s sweet yet deep and earthy.

Thrown together with the sweetness and creaminess of the banana, and the crunch of the chia, you have a super filling, rich, and gorge-worthy chia pudding to enjoy on the couch with a film or TV show.

Although let’s be honest, I wouldn’t judge you if you had it for lunch or any time of the day it’s that good!

Ingredients

To make my chocolate and banana chia pudding, you’ll need the following ingredients:

  • Coconut Milk (Coconut Drink)* or milk of choice – 2 cups
  • Banana – 1 large banana
  • Chia Seeds – 8 tbsp
  • Cacao Powder – 2 tbsp
  • Dark Chocolate – 2 large squares (about 30 grams)
  • Sweetener (Honey or Agave) – 2 tbsp, optional

Step-by-Step Instructions

Step 1 – Heat the milk up for about 30-60 seconds (just enough for it to be warm and melt the chocolate when poured over).

Step 2 – Pour over the chocolate, and stir until the chocolate is melted.

Step 3 – Add the cacao powder.

Step 4 – Add the banana and the chocolate-cacao-milk mixture to a small blender, and blend until well incorporated (45-60 seconds).

Step 5 – Divide the liquid up between two glass jars.

Step 6 – Add 4 tbsp of chia seeds to each jar, and stir them in. Let the jars sit on the counter for about 20-30 minutes, then give it another stir (to prevent any lumps from forming) and refrigerate for 6-8 hours (or overnight).

Step 7 – Once the chia pudding has been refrigerated, you can garnish it with some banana slices, a piece of dark chocolate, and honey or agave (optionally) for a finishing touch.

Notes

If using coconut milk, don't use the canned one but rather the carton one.

In the UK or EU, you’ll find the carton coconut milk under the name of ‘coconut drink.’
