Orange Cinnamon Yogurt Chia Pudding

Ingredients

  • 1 cup full-fat greek yogurt
  • 1 cup freshly-squeezed orange juice
  • 8 tbsp chia seeds
  • 1 tsp sweet ground cinnamon
  • 1 orange peeled and cut into bite-size pieces.
  • 2 tbsp honey or agave or sweetener of choice optional

Instructions

  • In a small blender, add the greek yogurt, freshly-squeezed orange juice, cinnamon, and, optionally, sweetener (if using any).
  • Blend everything for 30-60 seconds.
  • Divide the liquid up between two glass jars and add 4 tbsp of chia seeds to each, mixing them in.
  • After 15 minutes, stir the chia puddings again (to prevent lumps from forming) and add in the bite-size orange slices/pieces for texture. Then, refrigerate the chia pudding jars for 6-8 hours (or preferably overnight).
  • Once you’re ready to eat, top it with a handful of granola to compliment the creamy pudding with a little crunch.
