Ricotta Lemon Cream Mousse

Ingredients

  • 1 cup ricotta
  • 1 cup heavy cream
  • 2 tbsp lemon juice
  • 1 tsp vanilla paste or vanilla bean extract
  • 2 tbsp honey
  • zest from 1/2 lemon optional, for decoration
  • 1 sprig of fresh mint for decoration

Instructions

  • Beat the heavy cream in large bowl with a hand mixer for a couple minutes until you get soft peaks (don’t overmix).
  • In a separate bowl, beat the ricotta, lemon juice, honey, and vanilla with the hand mixer until smooth.
  • Combine the whipped cream and ricotta mixture and beat for just a few seconds to incorporate.
  • Transfer to a small serving bowl. You can optionally decorate it with mint and lemon zest.
