  • Lemon Zest (optional) – zest from 1/2 lemon, for decoration
  • Fresh Mint (optional) – 1 sprig of fresh mint, for decoration

Step-by-Step Instructions

Step 1 – Beat the heavy cream in large bowl with a hand mixer for a couple minutes until you get soft peaks (don’t overmix).

Step 2 – In a separate bowl, beat the ricotta, lemon juice, honey, and vanilla with the hand mixer until smooth.

Step 3 – Combine the whipped cream and ricotta mixture and beat for just a few seconds to incorporate.

Step 4 – Transfer to a small serving bowl. You can optionally decorate it with mint and lemon zest.
