Ingredients

  • 1 and 1/2 cup of cherry tomatoes 8.8oz or 250g
  • 3/4 cup crumbled feta cheese
  • 3 tbsp finely chopped mint
  • 1 small red onion
  • 1/2 cup kalamata olives pitted
  • 2 tbsp extra-virgin olive oil
  • 2 tbsp lemon juice and zest from half a lemon
  • 1/2 tsp dried oregano
  • 1 small garlic clove
  • 1/2 tsp kosher salt
  • 1/2 tsp ground black pepper

Instructions

  • Make the salad dressing by combining the olive oil, lemon juice and zest, dried oregano, minced garlic clove, salt, and pepper in a bowl. Mix it with a fork or whisk until well-combined.
  • Cut the cherry tomatoes in half and thinly slice the red onion. Add the tomatoes, onions, and pitted olives to a large mixing bowl.
  • Pour the salad dressing over the tomatoes, onions, and olives, and mix to combine everything.
  • Add the finely chopped mint on top and mix everything well.
  • Transfer the salad to a serving bowl and top with crumbled feta cheese.
