My tomato feta mint salad recipe is packed with crumbly, juicy, and crunchy goodness. It brings some beloved Greek and Mediterranean flavors together, bound in a fresh and zesty dressing, ideal for a late lunch on a warm summer’s day.

Tomato Feta Mint Salad

Those of you with a keen eye will have noticed I’ve taken plenty of inspiration from a classic Greek salad for this recipe. The addition of mint, however, is the ingredient that really breathes freshness into the salad.

This, to me, is the Mediterranean in a bowl. You’ve got tangy feta, briny black olives, juicy tomatoes, and plenty of fresh mint and other herbs all working together in harmony.

It’s also really simple to make. All you need to do is chop, dice, mix, and crumble the various ingredients, and be as liberal as you like with your particular favorites.

As you can see from the pictures, I’ve added plenty of feta cheese, but you can adjust the ratios according to your taste.

This recipe will serve two people if the salad is served as a main or four people if it’s as a side salad.

Recipe Ingredients

To make my tomato feta mint salad recipe, first assemble the following ingredients:

  • Tomatoes – 1 and 1/2 cup of cherry tomatoes (8.8oz or 250g)
  • Feta – 3/4 cup crumbled feta cheese
  • Mint – 3 tbsp finely chopped mint
  • Red Onion – 1 small red onion
  • Olives – 1/2 cup kalamata olives
  • Olive Oil – 2 tbsp extra-virgin olive oil
  • Lemon – 2 tbsp lemon juice and zest from half a lemon.
  • Oregano – 1/2 tsp dried oregano
  • Garlic – 1 small garlic clove
  • Salt – 1/2 tsp kosher salt
  • Black Pepper – 1/2 tsp ground black pepper

Step-by-Step Instructions

Step 1 – Make the salad dressing by combining the olive oil, lemon juice and zest, dried oregano, minced garlic clove, salt, and pepper in a bowl. Mix it with a fork or whisk until well-combined.

Step 2 – Cut the cherry tomatoes in half and thinly slice the red onion. Add the tomatoes, onions, and pitted olives to a large mixing bowl.

Step 3 – Pour the salad dressing and mix to combine everything.

Step 4 – Add the finely chopped mint on top and mix everything well.

Step 5 – Transfer the salad to a serving bowl and top with crumbled feta cheese.

Serving Suggestions

Naturally, some fresh pita bread slices, or any type of bread, is a great side for this salad.

If you’re planning on firing up the grill in the sun, you can take a page out of the Greek’s book and serve this as a side with some juicy spiced lamb kebabs.

Alternatively, this salad can be enjoyed with any type of grilled barbecue meat, such as steak and chicken.

You could also enjoy it with some hot paninis with plenty of different fillings, giving everyone a fresh salad to complement the heat and heartiness of the meat and bread.
