Tomato Toast with Manchego and Serrano Ham

Ingredients

  • 2 small baguettes cut into 20-24 slices, about 1/2-inch thick
  • 6 oz 170 grams Manchego cheese
  • 2.8 oz 80 grams Serrano ham
  • 2 medium-sized tomatoes
  • 2 cloves of garlic
  • 1/2 tsp kosher salt or more to taste
  • a pinch of ground black pepper or more to taste
  • 3 tbsp olive oil

Instructions

  • Make the toast. First, slice the baguettes into 1/2-inch slices and brush each side with olive oil.
  • Grill the bread slices for a couple minutes on each side, on an electric grill, grill pan, or grill. Alternatively, bake the bread slices in the oven at 360°F (180°C) for about 10-12 minutes until crispy on the outside and slightly golden.
  • Grate the tomatoes, either using a box grater or using the shredding disc on a food processor. Then, add the minced garlic, salt, and pepper.
  • Add the tomato mixture over the toasted and cooled baguette slices, then the manchego, and finally the serrano ham.
