Watermelon Granita

Ingredients

  • 1/2 medium-sized watermelon seedless
  • 1 lime juiced
  • 1 sprig mint

Instructions

  • Scoop up half the watermelon in a bowl. I like using an ice cream scoop but you certainly don’t need one.
  • Blend the watermelon, lime juice, and mint leaves either using an immersion blender and a big bowl or a regular blender.
  • Place the resulting juice in a shallow pan that will fit into your freezer. Put it in the freezer.
  • Once the mixture has started freezing (about 2 hours in a regular freezer), take a fork and scrape the frozen sides. Put it back in the freezer for another 1-2 hours.
  • Repeat the process 2-3 times until you’ve granulated it all.
  • Serve in your favorite glass, decorated with a slice of lime or some mint (optionally).
