Watermelon Granita (You Won’t Believe How Easy It Is to Make)
When I have icy cold and refreshing watermelon granita I simply close my eyes, and it feels like I’m on a sandy white beach!
Watermelon Granita Recipe
This recipe is breathtakingly simple to make. In no time at all, you’ll be sipping a delightful frozen treat, packed with the sweet and juicy flavor of watermelon. Summer will never be the same again!
Ingredients
What you need to make watermelon granita:
- Watermelon – 1/2 medium-sized watermelon, seedless
- Lime juice – 1 lime, juiced
- Mint – 1 sprig mint
Step-by-Step Instructions
Step 1 – Scoop up half the watermelon in a bowl. I like using an ice cream scoop but you certainly don’t need one.
Step 2 – Blend the watermelon, lime juice, and mint either using an immersion blender and a big bowl or a regular blender.
Step 3 – Place the resulting juice in a shallow pan that will fit into your freezer. Put it in the freezer.
Step 4 – Once the mixture has started freezing (about 2 hours in a regular freezer), take a fork and scrape the frozen sides. Put it back in the freezer for another 1-2 hours.
Step 5 – Repeat the process 2-3 times until you’ve granulated it all.
Step 6 – Serve in your favorite glass, decorated with a slice of lime or some mint (optionally).
Note: I’ve previously forgotten the granita in the freezer overnight without scraping it/ granulating it at all. Don’t worry if this happens to you! You can do this process in just one stage. You can freeze the granita and scrape it all with a fork at the end. You’ll need to put in a bit more effort than if you do it in stages but it will still work!
