Avocado Toast with Mushrooms and Goat Cheese
This avocado toast with mushrooms and goat cheese is packed with flavor! You’ve got rich and buttery smooth mushrooms, sautéed with garlic and herbs, and tangy goat cheese on a layer of mashed avocado over grilled bread. Every bite has crunch, creaminess, silky softness, and so much more!
Ingredients to Assemble
Let’s get started with this recipe. First, you’ll need the following:
- Avocado – 2 avocados
- Bread – 4 thick slices of bread (I used Kalamata olive bread but sourdough and multigrain work very well with this recipe as well).
- Mushrooms – 1/2 lb mushrooms, cleaned and sliced thinly, about 0.2 inches/5mm (I used closed-cup white mushrooms, but you can also use button or chestnut mushrooms)
- Thyme – 4 sprigs of fresh thyme (or 1 tsp dried thyme)
- Lemon – zest from one lemon + 1 tbsp of lemon juice (or more to taste)
- Garlic – 2 garlic cloves, minced
- Goat Cheese – 3 oz goat cheese (85 grams)
- Olive Oil – 3 tbsp extra-virgin olive oil (1 tbsp for the mushrooms and 2 tbsp for grilling the bread)
- Butter – 2 tbsp unsalted butter
- Salt – a pinch of kosher salt or sea salt flakes
- Pepper – a pinch of freshly ground black pepper
Step-by-Step Instructions with Photos
Step 1 – Sauté the sliced mushrooms. First, to a skillet over medium-high heat, add a tablespoon of the olive oil. When the oil is hot, add the sliced mushrooms and a pinch of salt and black pepper. The salt helps the mushrooms release water. Sauté for about 3 minutes until the mushrooms get a bit of color on them. Then, add the unsalted butter, minced garlic, thyme, lemon zest, and lemon juice. Sauté for about 3-4 minutes until the mushrooms are tender.
Step 2 – Grill/toast the bread. First, brush the thick bread slices with olive oil on both sides. Then, grill the bread slices in a skillet, grill pan, or cast iron pan for a couple of minutes on each side over medium-high heat until lightly browned and toasted.
Step 3 – Get the assembly board together: the grilled/toasted bread, the sauteed mushrooms, the soft goat cheese, and the avocados.
Step 4 – Assemble the avocado toast by adding mashed avocado first, then the sautéed mushrooms, and chunks of goat cheese. Optionally, garnish with some fresh thyme.
This is a super tasty way to add a little twist to your avocado toast. The mushrooms also make for a great vegetarian option if you don’t want to serve someone cured meats or smoked salmon.
