Easy and Quick Feta Sandwich with Roasted Peppers and Basil
My hearty feta sandwich recipe is a meal absolutely loaded with flavor! The tangy feta dip and sweet roasted peppers complement each other so well, and the toasted crusty bread makes for a truly satisfying mouthful.
Feta Sandwich Recipe
I’m always looking for a reason to bring home a fresh baguette from the supermarket bakery, and this sandwich is definitely it! It is simple and quick to make, and that creamy, tangy, herby, and caramelized filling is such a tasty combination.
Ingredients
For four sandwiches, you’ll need the following ingredients:
- Bread – 2 small baguettes (for 4 sandwiches) or 8 slices of crusty bread like sourdough
- Feta – 7 oz (200 grams) Greek feta
- Garlic – 1 large garlic clove (or more to taste)
- Yogurt – 1/3 cup plain yogurt
- Basil – 2 tbsp finely chopped fresh basil
- Arugula – handful of arugula (rocket)
- Butter or Olive Oil – 1 tbsp butter or olive oil (optional, for toasting the sandwich in the pan)
- Bell Peppers – 2 large pre-roasted peppers or fresh bell peppers to roast at home (if roasting bell peppers, you’ll also need a pinch of salt and black pepper)
Ingredient Notes
Roasted Peppers – You can roast peppers at home in the oven using my recipe for roasted peppers (three ways) or in the pan for about 10 minutes on medium-high heat with a touch of olive oil and a pinch of salt and pepper (turning occasionally).
Step-by-Step Instructions
Step 1 – Mix the feta and yogurt with a fork.
Step 2 – Add the finely chopped basil and minced garlic, and give everything a mix.
Step 3 – Slice the baguettes in half and then lengthwise.
Step 4 – Assemble the feta sandwich by adding the following:
- Feta mix on both sides
- Roasted peppers
- Arugula
Step 5 – (Optional): To a pan over medium heat, add 1 tbsp butter or olive oil and toast the baguette sandwiches on both sides for a couple of minutes.
The sandwich is much more delicious if toasted with butter (or olive oil), but it’s also very nice if served without being toasted.
You can enjoy this sandwich at any time of day. It’s very filling, and that filling just hits the spot with its sweet and tangy notes.
Serving Suggestions
This is a great sandwich to wrap up and take to work with you, and it doesn’t really need anything else.
However, if you do want to add some extras, consider some greens or even a simple salad.
