How to Upgrade a Goat Cheese Log with Pistachios, Cranberries, and Honey
This goat cheese log is so easy to make. The recipe coats tart, creamy goat cheese in a pistachio, cranberry, and honey coating. It’s perfect for charcuterie boards or wine and cheese nights. It’s sweet yet salty, really creamy, and very indulgent!
How to Upgrade a Store-Bought Goat Cheese Log with Pistachios, Cranberries, and Honey (in Just 5 Minutes)
Ingredients
To make my goat cheese log, you’ll only need four ingredients:
- Goat Cheese Log – I used a goat cheese log weighing 4.4oz or 125 grams
- Pistachios – 1/3 cup roasted and salted pistachios
- Cranberries – 1/3 cup dried cranberries
- Honey – 2 tbsp honey (I used raw acacia honey, but any honey works well here).
How to Make It (in Just 3 Easy Steps)
Step 1 – Finely chop the pistachios and cranberries and shape them into a rectangle (the width of the goat cheese log). You can use a chef’s knife or a food processor to chop them. I prefer chopping them with the knife (as there are fewer dishes to clean at the end:))
Step 2 – Drizzle the honey on top of the chopped pistachios and cranberries.
Step 3 – Roll the goat cheese log in them.
You can use your hands or a scraper (like the one pictured in the photos) to get all the pistachios and cranberries off the board and onto the cheese log.
Serve it with some bread or crackers. It can also be a main hero or at least a sidekick in a charcuterie board (like this fall-themed charcuterie board).
