Sweet and Creamy Goat Cheese Roasted Pepper Toast Recipe

Goat Cheese Roasted Pepper Toast/Crostini

Recipe Ingredients

Okay, let’s get started. First, get the following ingredients together:

  • Bread – 1 loaf of bread (ciabatta, sourdough, french bread, and olive bread are all great options)
  • Roasted Bell Peppers – 6 roasted bell peppers
  • Goat Cheese – 4 oz (110 grams) goat cheese
  • Arugula/Rocket – 1 cup arugula/rocket
  • Red Onion – 1/2 small red onion
  • Basil – 2 tbsp finely chopped fresh basil
  • Garlic – 1 garlic clove
  • Salt – 1/2 tsp kosher salt
  • Pepper – 1/2 tsp ground black pepper
  • Olive Oil – 3 tbsp extra-virgin olive oil
  • Balsamic Glaze (optional) – 1 tbsp or to taste

Step-by-Step Instructions

Step 1 – Chop the roasted peppers, thinly slice the onion, and finely chop the basil.

Step 2 – Add the chopped roasted peppers, finely chopped/minced basil, thinly sliced onion, minced garlic, salt, pepper, and 1 tablespoon of extra-virgin olive oil to a mixing bowl. Mix until everything is combined, and then set the bowl aside while moving on to the next step of toasting the bread/making the crostini.

Step 3 – Slice the loaf of bread into thick slices (about 12) and brush the slices with olive oil on both sides.

Step 4 – Toast the bread for a couple of minutes on each side, either on a grill or grill pan.

Step 5 – Spoon the roast pepper topping on the toasted/grilled bread.

Step 6 – Top with goat cheese, arugula/rocket, and optionally, balsamic glaze.
