Ham and Cheese Sandwich with Roasted Peppers
This ham and cheese sandwich with pesto mayo and roasted peppers makes for a great packed lunch or a quick meal at home.

What You Need for This Ham and Cheese Sandwich
The ingredients below are listed per sandwich. On the ingredients board, you can see the amounts for 2 sandwiches.

- Flatbread – 1 sliced flatbread for sandwiches (or use 2 slices of your favorite bread).
- Cheese – 2 oz Emmental or other Swiss cheese, sliced.
- Ham – 2 oz thinly sliced ham. I often use Black Forest ham, honey roast ham, and smoked ham.
- Roasted Peppers – 1 roasted pepper (preferably homemade, but store-bought works as well).
- Pesto Mayo Sauce – 1 tbsp of pesto mayo sauce (mix 1/2 tbsp of pesto (preferably homemade) with 1/2 tbsp of mayo).
How to Make It
Spread the pesto-mayo sauce on the 2 slices of bread or the inside of the sliced flatbread. To one, add half the cheese and the ham. To the other, add the remaining cheese and roasted pepper.

Assemble and serve or put it in your packed lunch.



If serving it immediately, you could make it a panini. If you have a panini press, put it in the preheated panini press for around 3-5 minutes until the cheese melts, and serve it hot.
