For 4 quesadillas, you’ll need:

  • Tortillas – 4 soft white tortillas (regular size, about 8-inch diameter).
  • Soft Goat Cheese – 4 oz soft goat cheese (about 1/2 cup). Make sure to use the soft goat cheese, not the one with a rind around it.
  • Cream Cheese – 4 oz cream cheese (about 1/2 cup).
  • Smoked Salmon – 8 oz smoked salmon
  • Avocado – 2 avocados, divided. Half to go inside the quesadilla, and half for topping the quesadilla.
  • Lemon – 1/2 lemon (about 1 tbsp lemon juice, plus 1/2 tsp of lemon zest).
  • Dill – 1 tsp finely chopped fresh dill or 1/2 tsp dried dill
  • Salt – salt, to taste
  • Pepper – ground pepper, to taste
  • Butter – 1 tbsp butter

Instructions

Step 1. Mix the cream cheese, soft goat cheese, lemon juice, lemon zest, dill, a pinch of salt and ground black pepper. Taste it and adjust the salt and pepper to your preference.

Step 2. Spread the cheese mixture on the tortillas. Place the smoked salmon and sliced avocado on half of the tortilla.

Step 3. To a large skillet over medium heat, add the butter. Once melted, add the folded tortillas (two at a time). Cook them until the bottom is golden-brown. Flip, and then cook the other side until golden-brown.

Be careful not to burn them, as they can go from ready to burnt in a matter of seconds.

Step 4. Once ready, serve them with sliced avocado on top. I also like to add some lemon zest and a half lemon slice as a garnish.

Variations

If you have more time, you can make these with guacamole instead of sliced avocado. Follow the same steps otherwise, and add half the guacamole in the quesadillas and half on top.
