Prep Time: 5 minutes
Cook Time: 5 minutes
Servings: 4 quesadillas

Ingredients

  • 4 soft white tortillas regular size, about 8-inch diameter.
  • 4 oz soft goat cheese
  • 4 oz cream cheese
  • 8 oz smoked salmon
  • 2 avocados divided. Half to go inside the quesadilla, and half for topping the quesadilla.
  • 1 tbsp fresh lemon juice
  • 1/2 tsp lemon zest
  • 1 tsp finely chopped fresh dill or 1/2 tsp dried dill
  • salt to taste
  • ground pepper to taste
  • 1 tbsp butter

Instructions

  • Mix the cream cheese, soft goat cheese, lemon juice, lemon zest, dill, a pinch of salt and ground black pepper. Taste it and adjust the salt and pepper to your preference.
  • Spread the cheese mixture on the tortillas. Place the smoked salmon on half of the tortilla and the sliced avocado on top.
  • To a large skillet over medium heat, add butter. Once melted, add the folded tortillas (two at a time). Cook them until the bottom is golden-brown. Flip, and then cook the other side until golden-brown.
  • Once the quesadillas are golden-brown, serve them with sliced avocado on top.

Notes

Note: For the goat cheese, make sure to use the soft one without a rind around it.
