Hummus Sandwich

Ingredients

  • 4 tbsp hummus
  • 2 slices of bread
  • ¼ avocado mashed
  • 1 oz 30 grams soft goat cheese
  • English cucumber sliced in thin slices with a knife or in peels with a vegetable peeler
  • ½ large tomato thinly sliced
  • a handful of watercress or microgreens or arugula

Instructions

  • Assemble the sandwich by spreading hummus on one slice of bread and mashed avocado on the other. Add watercress on top of the hummus. Add soft goat cheese, tomato slices, and cucumber slices or peels on top of the mashed avocado.
