Hummus Sandwich with Avocado, Cucumber, Tomato, and Goat Cheese

This hearty hummus sandwich can be ready in minutes. It’s made with hummus, mashed avocado, goat cheese, cucumber, tomato, and watercress between two slices of any bread you like. Take it to work for lunch or have it at home for a quick weeknight dinner with these easy air fryer baby potatoes or with a salad like this arugula tomato avocado salad.

For each sandwich:

  • Hummus – 4 tbsp hummus
  • Bread – 2 slices of bread (I used farmhouse white bread but you can use any bread you like, including sourdough, rye, and multigrain)
  • Avocado – 1/4 avocado, mashed
  • Goat Cheese – 1 oz (30 grams) soft goat cheese
  • Cucumber – 1/8 English cucumber, sliced in thin slices with a knife or in peels with a vegetable peeler
  • Tomato – 1/2 large tomato, thinly sliced
  • Watercress – a handful of watercress (or sub in microgreens or arugula)

Ingredient Notes

Tomato & Cucumber – If making this sandwich ahead, remove the seeds from the cucumber and tomato as they let out water and can make the sandwich soggy.

Easy Instructions

Assemble the sandwich by spreading hummus on one slice of bread and mashed avocado on the other. Add watercress on top of the hummus. Add soft goat cheese, tomato slices, and cucumber slices or peels on top of the mashed avocado.
