Air Fryer Parmesan Baby Potatoes Recipe
These air fryer parmesan baby potatoes go with absolutely anything! Coated with parmesan and Italian seasoning, these potatoes have a nice bite on the outside and are fluffy on the inside.
Make sure your serving bowl is big enough because everyone is going to be reaching across the dinner table with their fork to nab another one and another one!
Assemble Your Ingredients
To make my air fryer parmesan baby potatoes, you’ll need the following ingredients:
- Baby Potatoes – 2 lb baby potatoes (900 grams)
- Parmesan – 1/2 cup grated Parmigiano Reggiano (I recommend buying a parmesan wedge and grating at home rather than buying pre-grated)
- Italian Seasoning – 1 tsp dried Italian seasoning (you can make your own by mixing a combination of dried herbs like basil, oregano, marjoram, thyme, rosemary, and parsley)
- Garlic Powder – 1/2 tsp garlic powder
- Salt – a pinch of kosher salt
- Pepper – a pinch of black pepper
- Olive Oil – 1 tbsp olive oil (or your favorite oil for roasting)
Make Them with These Simple Steps
Step 1 – Clean and cut the baby potatoes in half. If you have some baby potatoes that are much larger, you can cut them into 3 or 4 pieces so that they’re all relatively equal in size. This way, they can cook evenly.
Step 2 – Season the baby potatoes with dried Italian seasoning, garlic powder, salt, pepper, and half the parmesan. Add the oil and, using your hands, make sure the potatoes are all coated in oil and seasoning.
Step 3 – Preheat the air fryer according to the manufacturer’s instructions (or for about 3 minutes if unsure).
Step 4 – Air fry at 380°F (190°C) until baby potatoes are fully cooked, slightly crispy on the outside, and fluffy on the inside. For the size pictured in this recipe, it took 25 minutes. Shake the air fryer basket after 10 minutes and then again after 15 minutes to make sure the potatoes move around so that they can air fry evenly.
Step 5 – Toss with the remaining parmesan and, if needed, salt and pepper to taste.
Serve them hot in a large serving bowl with a dip (like the one I recommend below), and let your hungry guests or family tuck in!
Serving Ideas for this Side Dish
Optional: Add freshly chopped herbs like parsley, lemon juice and/or chili flakes.
I’ve tried these potatoes with my lemon basil aioli and with a roasted garlic mayo. Both make for a delicious dipping sauce for the potatoes.
As potatoes are so versatile, the dishes you could pair them with are endless. One that worked particularly well was my air fryer parmesan chicken wrap with these potatoes (the chicken wrap recipe will be live tomorrow)!
As both were made in the air fryer, I could prepare them at the same time. What a match!
Reheating
What I love about most air fryer recipes is how easy it is to reheat them and they’ll taste just like they’re freshly cooked! For this recipe, to reheat, air fry at 380°F (190°C) until warmed through and crispy on the outside, about 3-4 minutes in a preheated air fryer.
