Avocado Toast with Tomatoes, Basil, and Mozzarella
This avocado toast recipe takes influence from one of Italy’s most beloved salads: Caprese. It tops toasted or grilled multigrain bread with smashed avocado, chopped mozzarella, tomatoes, and fresh basil. The crunch is balanced beautifully with the fresh, sweet, and juicy toppings. Enjoy this for brunch with fresh orange juice, or make it along with a few more avocado toast combos.

This avocado toast is very simple to make. You’ll need the following:
- Bread – 4 thick slices of bread (I used multigrain. Sourdough works great as well.)
- Avocado – 2 avocados
- Tomatoes – 8 oz (225 g) tomatoes
- Basil – 2 tbsp chopped fresh basil
- Mozzarella – 8 oz (225g) fresh mozzarella
- Olive Oil – 2 tbsp extra-virgin olive oil
- Salt – 1/2 tsp kosher salt (or to taste)
- Pepper – 1/4 tsp ground black pepper (or to taste)
Easy Step-by-Step Instructions
Step 1. Chop the tomatoes, fresh basil, and mozzarella and add to a bowl. Add salt and pepper and mix.
Step 2. Brush the bread slices with olive oil (using a pastry brush or simply drizzling the olive oil on the bread). Then grill/toast the bread in a skillet, cast iron pan, or grill pan for about 2 minutes on each side over medium-high heat until lightly browned and toasted.
Note: You can also choose to skip the olive oil and simply toast the bread in the toaster. It won’t be as indulgent but still very delicious.
Step 3. Get all the ingredients together: the toasted or grilled bread, chopped tomatoes, mozzarella, and basil, and avocados.
Step 4. Mash the avocado on the toasted bread, and add the chopped tomatoes, basil, and mozzarella.
This is lighter and more aromatic than some of my other avocado toast ideas. I find this works well for an easy lunch or appetizer, whereas some of the egg-based ones make for a hearty and quick breakfast.
How to Serve it
Avocado toast has everything you need packed into a bite-sized hand-held treat. However, if you want a few more options, you can top this a generous drizzle of balsamic vinegar to add more sweetness.
