Stuffed Beef Burger Recipe (with Goat Cheese, Parmesan, and Sun-Dried Tomatoes)

Stuffed Beef Burger Recipe
Beef and hamburgers, when the meat is quality, only need some time on the grill or in the pan to be incredibly tasty. So, with this recipe, I wanted to do something a little more creative. That sweet, cheesy stuffing really takes the flavor up a few notches.
Add juicy tomato, peppery arugula, melted cheese, and a crispy-yet-soft toasted brioche bun, and you have a beef burger that is guaranteed to get some satisfying groans from the dining table on the patio!
Ingredients
Let’s get started with my stuffed beef burger recipe. First, you’ll need the following ingredients:
For 2 Burgers:
- Beef – 8 oz (1/2 lb) ground beef
- Burger Buns – 2 burger buns
- Sundried Tomatoes – 6 sundried tomatoes
- Parmesan – 2 tbsp grated parmesan
- Goat Cheese – 2 oz (56 grams)
- Garlic – 1/4 tsp garlic powder
- Black Pepper -1/2 tsp ground black pepper
- Salt – 1/2 tsp salt
For the Burger Toppings:
- Cheddar Cheese – 2 slices cheddar cheese (optional)
- Tomato – 2 thick slices of tomato
- Arugula – 1/3 cup arugula/rocket
Lemon-Garlic Mayo Dressing:
- Mayo – 1/4 cup regular mayonnaise
- Garlic – 1 garlic clove (minced)
- Lemon Juice – 1 tbsp fresh lemon juice
- Salt – a pinch of salt
- Pepper – a pinch of black pepper
Step-by-Step Instructions
Step 1 – Make the garlic mayo dressing by combining the mayo, lemon juice, minced garlic, and a pinch of salt and pepper.
Step 2 – Make the burger stuffing by combining chopped sundried tomatoes with grated parmesan and goat cheese.
Step 3 – Take the 8 oz of beef and divide it into 4 equal patties (about 2 oz each) and shape them with your hands to be slightly bigger than your burger buns.
Step 4 – Season them with salt, black pepper, and garlic powder.
Step 5 – Spoon half the mixture on one patty and the half on another patty.
Step 6 – Cover with the other two patties and pinch the sides to seal them shut.
Step 7 – To a cast iron pan or a grill pan (or any pan you have at home), over medium-high heat, add 1 tbsp of oil and cook the patties for about 4-5 minutes on the first side.
Step 8 – Flip and cook for another 4-5 minutes on the second side until the burger is done.
If adding cheese, add it here 2 minutes before your burger is done.
Step 9 – (Optional) Toast the buns in a pan for a couple of minutes.
Step 10 – Assemble the burger: toasted bun, stuffed burger patty, tomato, arugula, and lemon-garlic mayo.
Serving Suggestions
Just look at that juicy, oozy, creamy cross-section! There is plenty going on in this burger for it to be filling enough without any sides. However, if you do want some side ideas, consider some of the below.
You can always go with the classic pairing of crispy French fries or some chunky chips. I also have a rosemary salt potatoes recipe that goes so well with beef.
Go crazy with the condiments. Put plenty of ketchup, mustard, and mayo on the table, and maybe even try some of your own dipping sauces, like my lemon basil aioli.
I also find avocado or homemade guacamole go so well with beef burgers.
