Toast with Butter Beans, Burrata, and Homemade Pesto
This loaded toast with butter beans, burrata, and homemade pesto just oozes richness and creamy goodness! It consists of burrata cheese on a bed of mashed butter beans, lemon, garlic, and chili over toasted bread, drizzled with fresh basil pesto.
This dish is really easy to make. It also doesn’t take up too much time, and it is great as an appetizer or quick light meal if you need something speedy and filling. You can easily serve this with a salad and use any leftover bread you have to make some of these avocado toasts.

If you want to make this butter bean, burrata, and pesto toast, you’ll first need to get these ingredients:
- Bread – 4 thick slices of multigrain bread (or sourdough)
- Butter Beans – 1 small can (12 oz/400 grams, drained weight of about 8.2oz/235 grams) of butter beans (lima beans), unseasoned
- Burrata – 1 burrata cheese (8 oz or 225 grams)
- Pesto – 1/4 cup fresh basil pesto (homemade or storebought)
- Lemon – 1 lemon (zest from one lemon and 2 tbsp of lemon juice)
- Garlic – 1 large garlic clove
- Salt – 1/2 tsp kosher salt
- Pepper – 1/4 tsp black pepper
- Chili Flakes – 1/8 tsp of chili flakes
- Olive Oil – 1 tbsp extra-virgin olive oil (plus 2 tbsp more if toasting the bread in the skillet)
Step-by-Step Directions
Step 1. Add the (drained) butter beans, lemon zest, lemon juice, garlic, salt, pepper, and chili flakes to a food processor and puree until relatively smooth (about 2-3 minutes). Add 1 tablespoon of extra-virgin olive oil and puree for another 30 seconds to blend the oil in.
Step 2. Toast the bread slices (either in the toaster or in a skillet). Toasting them in the skillet will make them more indulgent as we’re brushing them with olive oil. If toasting them in a skillet, brush them with olive oil (about two tablespoons total for all four slices) and toast them in a skillet, cast iron pan, or grill pan for about 2 minutes on each side over medium-high heat until lightly browned.
Step 3. Assemble the ingredients: the toasted bread, the seasoned mashed beans, the pesto, and the burrata.
Step 4. Spread the pureed beans on the toasted bread. Add 1/4 of the burrata to each of the bread slices, on top of the mashed beans. Drizzle about 1 tbsp of pesto over each slice.
How to Serve the Toast
So I went a bit fancy with these and served them on a white cake stand. These would make for a great centerpiece at a party. You could put other toast on it, too, like avocado toast and crostini to give your guests plenty of choice.
What I love most about this combination is balance. The rich, zesty mashed butter bean mixture, earthy pesto, and creamy burrata all complement each other, while the crunch of the bread adds texture.
