Halloumi Burger Recipe

Covered in a crispy breadcrumb coating and nestled between a toasted bun with juicy, creamy toppings, this is a super fun and tasty way to prepare halloumi for you and the whole family.
Halloumi Burger Recipe
Struggling for ideas when it comes to halloumi? From salads to meze platters, you can do a lot with this cheese. However, making it the star of the show in a burger not only gives you a delicious and filling burger patty, but it also gives you an option for your vegetarian friends if you’re having a barbecue or burgers for dinner.
Ingredients
To make my halloumi burger, you’ll first need to assemble the following ingredients:
For the Burgers:
- Burger Buns – 2 brioche burger buns
- Halloumi – 1 pack of Halloumi (8oz or 225grams)
- Flour – 3 tbsp all-purpose flour
- Eggs – 1 egg
- Breadcrumbs – 1/3 cup of Panko breadcrumbs
- Salt – 1/2 tsp salt
- Pepper – 1/4 tsp black pepper
- Oil – 1 cup neutral oil (sunflower, vegetable, canola), for frying
For the Burger Dressing:
- Mayonnaise – 1/4 cup regular mayonnaise
- Mustard – 1/2 tsp Dijon mustard
- Capers – 1 tsp capers
- Dill – 1 tbsp chopped fresh dill
- Spring Onions – 1 spring onion
- Salt – pinch of salt
- Pepper – pinch of pepper
- Sugar – 1/4 tsp granulated sugar
For the Burger Toppings:
- Lettuce – 4 gem lettuce leaves
- Tomato – 2 thick slices of tomato
Step-by-Step Instructions
Step 1 – Finely chop the dill, spring onions, and capers, and add it all to a small bowl with the mayonnaise, mustard, salt, pepper, and sugar. This will be your burger dressing.
Step 2 – Set up the breading station for the halloumi: flour, beaten egg, and breadcrumbs. Add a pinch of seasoning (salt and pepper) to each.
Step 3 – Cut the halloumi lengthwise in two (so that you have 2 halloumi burger patties.
Step 4 – Roll each halloumi patty through the flour, then the beaten egg, and finally the breadcrumbs.
Step 5 – Set a pan over medium-high heat and add 1 cup of oil to it.
Step 6 – When the oil is hot, add the halloumi and fry on one side until golden, and then flip and cook on the other side until golden. It will be about 2 minutes per side.
Step 7 – Remove the halloumi to a wire rack or plate with paper towels on it to absorb the oil.
Step 8 (Optional) – Toast the burgers (face down) in a dry pan over medium heat (about a minute or so). You don’t need any butter or oil if using brioche buns.
Step 9 – Assemble the burgers: toasted bun, halloumi patty, a couple tablespoons of the burger dressing, a thick slice of tomato, and a couple of leaves of gem lettuce.
Serving Suggestions
As with plenty of burgers, a side of crispy fries or chunky chips always puts smiles on faces. You could even try my rosemary salt potato wedges if you want something a little thicker and aromatic.
Don’t hold back on the toppings, and alongside the dressing, make sure the classic condiments, from ketchup to mustard, are on the table.
A side of greens, like arugula(rocket) or a heartier green salad is always good to have too. You could try some of the salads I have on the site, like my tomato, mint, and feta salad, if you want some ideas.
