Halloumi Wraps with Avocado, Roasted Peppers, Tomatoes, and More

This halloumi wrap is absolutely packed with veggie goodness. It consists of grilled halloumi slices, tomato, mashed avocado, and other veggies, coated in a garlic yogurt sauce, rolled in a soft tortilla, and toasted in a pan. This is ideal for a grab-and-go lunch, easy dinner, or for getting more yummy halloumi in your life!

Ingredients to Make the Wrap

First things first, let’s get our ingredients together. You’ll need the following:

For 4 wraps:

  • Tortilla Wraps – 4 regular flour tortillas (8-inch diameter)
  • Halloumi – 16 oz halloumi, cut into 16 slices
  • Avocado – 2 avocados
  • Tomatoes – 2 tomatoes
  • Roasted Pepper – 1 large roasted pepper
  • Yogurt – 1/3 cup plain yogurt (or Greek yogurt)
  • Garlic – 1 clove, minced
  • Lettuce – 1/4 iceberg lettuce, shredded
  • Red Onion – 1/2 red onion, thinly sliced
  • Salt – to taste (1/2 tsp kosher salt; if using regular salt, then use 1/4 tsp)
  • Black Pepper – to taste (1/4 tsp ground black pepper)
  • Olive Oil – 2 tbsp olive oil

How to Make it in 5 Easy Steps

Step 1. Grill or pan-fry the halloumi. To a skillet or a grill pan (over medium heat), add 1 tbsp of olive oil and the halloumi slices and pan fry/grill for about 2 minutes on each side until golden.

Step 2. Get the assembly board ready.

  • Roughly mash the avocado.
  • Slice the tomatoes and add a pinch of salt to them.
  • Thinly slice the red onion.
  • Mix the yogurt with minced garlic, salt, and pepper.
  • Thinly slice/shred the iceberg lettuce and toss it with the yogurt sauce.
  • Chop the roasted pepper.

Step 3. Assemble the wraps.

  1. the mashed avocado,
  2. tomato slices,
  3. grilled halloumi,
  4. thin red onion slices,
  5. shredded iceberg lettuce tossed with the yogurt, and
  6. the chopped roasted pepper.

Step 4. Fold the wraps (see the pictures below for the step-by-step on the best way to fold the wraps.

Roll tightly (but carefully not to break the tortilla. Place them seam down on the plate to hold them together. In the next step, we’ll place them seam down in the frying pan to seal them.

Step 5. Toast the wraps in a skillet/frying pan. Add a drizzle of olive oil to the skillet/pan and toast them over medium heat for 1-2 minutes on each side until the outside is golden. Make sure to place the wraps seam down first so that they seal.

Enjoy it while warm. There is rich saltiness from the halloumi, sweetness from the tomato and avocado, crunch from the lettuce, garlic-infused creaminess from the sauce, and so much more.

Roll tightly (but carefully not to break the tortilla). Place them seam down on the plate to hold them together. In the next step, we’ll place them seam down in the frying pan to seal them.
