Air-Fryer Parmesan Potato Wedges
Very few sides keep everyone happy quite like potato wedges! These parmesan potato wedges are so easy to make and are great for all kinds of occasions, from an easy weeknight side to a family gathering.
The wedges have a crispy bite with a fluffy, melt-in-your-mouth inside. You can serve them with all kinds of dips and sauces, like this lemon basil aioli.

What You’ll Need
To get started, you’ll first need the following ingredients:

- Potatoes – 5 medium potatoes (about 1 1/2 lb or 700 grams)
- Parmesan – 1 oz grated parmesan
- Garlic – 1 large garlic clove or 1/2 tsp garlic powder
- Italian Dried Herb Seasoning – 1 tsp Italian seasoning. This is simply a blend of dried herbs like oregano, basil, marjoram, thyme, rosemary, and parsley. While you can buy store-made in almost any grocery store, you can also make your own at home by mixing a combination of these dried herbs that you have at home.
- Oil – 1 tbsp of olive oil, or substitute with a neutral oil like sunflower oil or canola oil
- Salt – a pinch of kosher salt or flaky sea salt
- Black Pepper – a pinch of ground black pepper
How to Make the Wedges (With Photos)
Step 1. Peel the potatoes and cut each one into 8 wedges. When you peel the potatoes, have a large bowl of cold water ready to add each peeled potato to. Then, take each peeled potato and cut it into 8 wedges. Return the wedges to the bowl with cold water. If you have extra time, you can let them sit in the water for 30 minutes to release the starch and make them crispier (but it’s not necessary). When you’re ready to make them, drain them, rinse them in clean water, and dry them with a kitchen towel or paper towel.

Step 2. Season the potato wedges. Toss the wedges in a large bowl with salt, pepper, Italian seasoning, grated parmesan, minced garlic (or garlic powder), and the oil.

Step 3. Air fry the potato wedges. Preheat the air fryer to 400°F/200°C. Add the potatoes, ideally in a single layer, and air fry them, tossing them after 10 minutes and again after another 5 minutes to make sure they get evenly cooked. The total cooking time depends on your air fryer. For the potato wedges pictured here in a Ninja dual air fryer, it takes about 18 minutes.

Step 4. Serve. Once they’re ready, serve them immediately while still warm.
Personally, I love these potato wedges with chicken dinners like these crispy panko prosciuto chicken tenders or this ground chicken burger and a side salad. They’re also great if you want to turn a lunch recipe into a dinner, for example, by serving these potatoes alongside a sandwich like this ham and cheese sandwich.
